Apple Snack Cake
Servings: 16   |   Prep Time: 45 minutes

Ingredients
4 tablespoons unsalted butter, melted, plus more for pan
1 cup whole-wheat pastry flour
3/4 cup granulated sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 cup applesauce
1/2 cup buttermilk
1 large large egg
confectioners sugar, for dusting

Directions
1. Heat oven to 350 F. Butter an 8-inch baking dish. Whisk together the flour, sugar, baking powder, baking soda, and cinnamon in a medium bowl; set aside. Add the applesauce, buttermilk, butter, and egg and mix to combine.
2. Transfer to the prepared pan and bake until a toothpick inserted in the center comes clean, 20 to 30 minutes. Cool in the pan for 5 minutes, then turn out to cool completely. Dust with the confectioners sugar.
