Low Calorie Coleslaw

This is a really simple coleslaw that anybody can make from ingredients that you likely have in your kitchen right now. It's simple to make but even better, it's very low in calories and really takes the edge off your appetite if you're struggling between meals.

1/4 cup white vinegar (11 cal)
2 tablespoons calorie free sweetener (0 cal)
2 tablespoons olive oil (240 cal)
1 normal sized cabbage (200 cal)
1 carrot (or a hand full of baby carrots) (25 calories)
1 teaspoon salt (0 cal)
Salt and pepper to taste (0 cal)

Grate your cabbage and carrot. You could use a grater and take an while to do this but I prefer a food processor. It reduces that cabbage and carrot to a pile of tasty shredded vegies in seconds and I run no risk of grating my knuckles

Then mix the vinegar, sweetener, and oil. Add cabbage to dressing and season with salt and pepper. Toss with fingers to combine. Adjust seasoning. Let stand 20 minutes. Re-toss and serve.

Nutritional Info
476 calories total. Number of servings will vary, depending on how hungry you are. This will make SEVERAL servings if you're using it as a simple side. Either way, you can do the quick math for calories per serving.

I made this but I think I substituted too many things, it wasn't that good. I'll try it again with the correct ingredients and see how it is

I would love to get it to taste good because it's great for you and really low in calories!

Edit: I also used way too much red cabbage so it looked like borscht... not super appetizing for salad
